ARE ICE-CREAMS OF SUMMER TRUSTWORTHY?
Summer has arrived and markets, patisseries mobile ice-cream sellers try to sell their ice-cream products via advertisements targeting primarily our children, colorings, flavorings, stabilizers and emulsifiers. We met with ice-cream in the Republic era. Until the ice-cream arrived, sherbet was drunk and “karsanbac”, a kind of halwa made of snow, was eaten in Anatolia in order to cool off. The snow was stored in plateaus, caves of mountains or in wooden houses, that were built for the purpose of storing the snow, by covering the snow by straw-like materials in winter and in summer, those snow blocks were cut in big pieces to transfer and sell in villages, towns and cities by a car. They were sold to beverage-sellers and to homes. It was eaten in jumbo cups or bowls that were filled with the snow and sweets like cherry sherbet, fruit marmalade and molasse. This nice and healthy practice still continues in some parts of Anatolia. Because of this reason, it would be said that snow-made halwa is the origin of ice-cream. With the discovery of the New World and the penetration of sugar into daily-life, ice-cream came to the fore.
There are different kinds of fruit-flavoring ice-creams that does not contain milk and cream. These ones are made of fruit-juices and there are even some ice-creams made of yoghurt. Maras hand-churned ice-cream which is unique to Turkey is another kind of ice-cream. It has a very firm mold that the ice-cream is hanged to butcher hook and is serviced after cutting it by a knife. The characteristic of Turkish ice-cream that makes it different from others is its ingredients “sahlep” and “mastic”. Sahlep is derived from the roots of wild orchid and is grinded in mills. Being utilised in ice-cream, sahlep would also be consumed by cooking it with sugar and milk and dredging cinnamon upon it with bagels and donuts as a hot drink in winter. It is a very recuperative product. However, one should be cautious while buying it for making ice-cream in summer or making a hot drink in winter because, unfortunately, fake or artificial sahlep can easily be produced and sold.
Nowadays, milk, milk powder, sugar, glucose or artificial sweeteners, margarine and milk fat, chocolate, cocoa, fruit, hazelnut peanut, caramel, flavors, sahlep, thickener, natural and naturally identical flavors are used in the production of ice-cream. In these ice-creams, there are more milk powder than milk, more fruit-flavoring than fruit and artificial sweeteners instead of sugar and if this is the situation, it would be more appropriate to mention about its harms than benefits, as long as it feeds us with additives and sweeteners. Therefore, our belief and our health are under risk.
